Nicolas Maillart Franc de Pied 2019 is a single plot Cuvée (Les Coupes), single grape variety (100% Pinot Noir) and limited to less than 4000 bottles per vintage. The peculiarity of this Champagne is that it is made from "free-root" vines, that is to say without American rootstock as was the Champagne vineyard before the phylloxera crisis.
The Abyss cuvée is a very unique Champagne which has aged underwater for 1 year. These special aging conditions highlight during the tasting a mineral and chalky signature, reflecting the great terroirs of Champagne.

Nicolas Maillart Rosé Grand Cru is a very technical cuvée that begins in the vineyard with the selection of plots of old Pinot Noir from the best terroirs of Bouzy. The estate uses the "saignee" method, i.e. the Pinot Noir grapes will macerate for a few hours to obtain the rosé color. Then, the Chardonnay is blended with the Pinot Noir to give freshness to this Cuvée.
